Barista berasal dari bahasa Itali, bisa juga
disebut sebagai bartender, namun secara spesifik, Barista dapat
dijelaskan sebagai orang yang bertugas sebagai peracik kopi pada sebuah
coffee shop atau tempat makan lainnya yang memiliki sebuah mesin
espresso.
Alat utama daripada Barista adalah mesin espresso dan beberapa
aksesorisnya. Sesuai dengan pekerjaannya, Barista harus memiliki
kemampuan khusus dalam pekerjaannya sebagai peracik kopi dan juga
diperkuat dengan wawasan tentang berbagai macam biji kopi.
Jika anda
giat dalam mengunjungi berbagai macam coffee shop yang berbeda, tentu
anda akan merasakan rasa yang berbeda dari setiap coffee shop yang anda
kunjungi.
Misalkan anda mencoba Cappucino sebagai patokan utama untuk
pembandingnya, tentu terdapat beberapa rasa Cappucino yang berbeda,
walaupun anda mengunjungi Coffee shop dengan nama yang sama namun cabang
yang berbeda, ataupun anda mengunjungi Coffee shop yang sama, namun
anda mengunjunginya pada waktu yang berbeda. Mengapa hal itu bisa

Untuk itu kami telah mencoba membuat coffe blend dari beberapa kopi single origin yang menghasilkan variety kopi yang lengkap dengan mempunyai kelebihan rasa pada tiap masing-masing variety. Tergantung rasa apa yang anda inginkan.
Saat ini kami telah mempunyai 40 rasa yang berbeda untuk setiap variety, tujuannya adalah agar coffe shop anda mempunyai ciri khas rasa yang berbeda dari coffe shop lainnya.
Hal ini yang menyebabkan setiap coffe shop walaupun bersebelahan tempat tapi masing-masing punya pelanggan.
Juga ada Longberry (hybrido de tymor). Lalu ada Ateng perawakan pendek dan berbuah lebat (sejenis Caturra variety).Ateng pucuk merah, ada Ateng Jaluk yang berasal dari daerah Jaluk. Juga ada Ateng kuning (yellow caturra), untuk jenis timtim itu sendiri belakangan terpecah dalam berbagai jenis lagi.
Kopi Jemen (sebutan untuk lini S 972 ,atau Jember)atau varietas Sidikalang. Lalu ada kupi Ramong( Abbysinia Ethopia seri 7 atau 9) yang cita rasanya luarbiasa enak. Seperti leluhur nya di Ethopia sana. Selanjutnya mungkin jenis typica yang konon sudah mulai langka di tingkat dunia. Dan seperti lampiran foto yang adalah jenis kopi mocha,yang konon hanya ada di 2 negara yaitu Ethopia dan Yaman ternyata juga ada di gayo.
Sebaran varitas kopi dengan segala keunikan nya itu tersebar di penjuru perkebunan kopi rakyat Gayo dengan tekstur tanah yang mulai dari tanah berbatu, tanah liat , tanah berpasir.
Ketinggian lahan dan kompleks nya naungan serta tanaman peneduh kopi serta metoda tani organik masyarakat gayo yang sarat dengan kearifan lokal.
